Carboxymethylcellulose is becoming an important part of the winemaker’s tool box for white wine tartrate stabilisation. However, like all wine additives, there is more to the successful use of CMCs than sales brochures might suggest. This webinar will look at how CMC works; when it is appropriate to use; what precautions you need to take and the best ways to test the wine when using it.
