Cold Stability, how to manage and measure it
Cold stabilisation represents a significant use of winery energy, labour and tank movements and the results are still often uncertain. This presentation will review the methodologies out there including newer additives such as CMCs, discuss the best methods for testing and highlight some of the pitfalls that are encountered in making reliably cold stable.
