Crafting diverse wine styles through an understanding of how grape composition affects wine composition
Description
Existing Australian wine styles are diverse and future wine styles may need to be even more diverse depending on what consumers want. This presentation will summarise which compounds in the grape directly influence wine style, and which ones are created through winemaking processes or the intervention of yeasts. Such knowledge will allow vignerons to modulate grape compounds in the vineyard and dial them up or down through winemaking to respond to changing climate and consumer preference.
