Fermentation management places real demands on winery resources, ranging from laboratory analysis to infrastructure constraints such as energy use and tank availability. The AWRI has been working to provide wine producers with fermentation control and automation tools to manage these demands. This presentation outlines results and applications of AWRI’s ferment control and simulation studies using commercial-scale fermentation data. Automation opportunities to use AWRI’s ferment simulation tools for routine fermentation management in the winery will also be discussed.
