Making better wine for health
The chemical components of wine considered primarily responsible for cardiovascular therapeutic effects are ethanol, the phenolic compounds and their polyphenolic forms. This talk describes the potential mechanisms for the effect of the phenolic compounds in the body and also explains both the viticultural and vinification factors that influence their concentration in grapes and wine.
